What’s Cookin’ Wednesday – Chili




Chili is a staple in our house during the winter months. It’s so easy and can be whipped up on a time crunch. My favorite vegetarian chili recipe is so simple it’s scary!


 

Ingredients:

  • 2 caps black beans drained and rinsed

  • 1 can chili beans drained and rinsed

  • 1 can pinto beans drained and rinsed

  • ½ cup quiona

  • 1 cup onion

  • 1 cup green pepper

  • 1 can diced tomatoes (2 if you really like tomatoes)

  • 2 cans tomato sauce

  • 1 cup meatless meat crumbles

  • ½ cup vegetable broth

  • 1 package of chili seasoning (your preference)

  • *Optional toppings: cheese, crackers, chips


Directions:

  • Prepare the canned beans by draining and rinsing them.

  • Cut up onion and green pepper (unless using frozen).

  • Put all ingredients into a large pot and cook for 25-30 minutes on low to medium heat.

  • Be sure to stir frequently to ensure it doesn’t burn.

  • Serve and top with your favorite chili toppings!
