What’s Cookin’ Wednesday – Black Bean Tacos




I love tacos and all variations of them so I’m always looking for ways to change them up. We discovered this black bean taco recipe and absolutely love it! We use the air fryer to crisp up the shell, but you can easily crisp it up on a skillet too!


 

Ingredients:


-1 can black beans drained and rinsed

-1/2 cup meatless meat crumbles (or beef)

-1/2 packet of sodium free taco seasoning

-4-6 soft taco shells of your choice


Directions:

-Turn on air fryer to 400 or warm oil in skillet on low heat

-Open and rinse can of beans and empty into a bowl

-Add meatless meat crumbles and taco seasoning and combine until evenly coated with seasoning

-Add mixture to tortillas and wrap into a burrito, cook in air fryer for 10 minutes or on skillet for 5 minutes

-*Top with favorite taco toppings: sour cream, cheese, salsa, guac, or fajita veggies
