What’s Cookin’ Wednesday – Black Bean Quinoa Tacos
I swear if I could eat tacos every day I would. I love making new and different taco mixtures and this one didn’t disappoint! It was such an easy way to sneak in a serving of vegetables too which I’m all about. This recipe makes enough for 10 servings.
Ingredients:
-2 bags of cauliflower rice
-3 cans black beans, drained and rinsed
-1 cup quinoa
-2 jalapeños, chopped
-1 cup onion
-1 tablespoon olive oil
-taco seasoning packet
-10 soft shell tortillas
Directions:
-In a large pot heat the oil on medium heat and sauté the onions and jalapenos
-In a smaller pot boil water enough to cook the quinoa
-Cook the cauliflower rice in the microwave per package instructions
-Add the black beans, cooked quinoa, cauliflower rice to the pot and simmer for 10-15 minutes
-Add the taco seasoning to taste
Serve on a soft tortilla shell and top with your favorite taco toppings!
